Vilmart, undoubtedly remains one of the brightest jewels of our portfolio. With a meticulous perfection and a fine-tuned intuition for his craft, Laurent continues to re-invent the meaning of the term, ‘perfection.’

From his 11 ha of prime sited vineyards, located around the sleepy village of Rilly La Montagne, on the foothills of the Montagne de Reims, Laurent produces a range of exceptionally fine and complex Champagne.

CLASSIC ROSES FOR VALENTINE’S DAY Vilmart Cuvee Rubis Produced from a blend of 90% Pinot Noir (including 15% red wine) and 10% Chardonnay. Many rose Champagnes seem to fall short, but this is truly sensational. With an attractive depth of colour, this is a rose of real substance with wonderful purity and finesse! The bouquet offers tantalizing aromas of wild strawberry, raspberry and cherry fruits with an expressive array of red and orange fruit flavours on the palate balanced by an uplifting, pink grapefruit acidity. Super poise and precision.

Delicious on its own, or a perfect partner to many dishes! Wonderful with lobster and prawns, or equally enjoyable with citrus-based desserts.

2012 Emotion Definitely one of the single greatest rose Champagnes! Produced with the same philosophy and dedication as the Coeur de Cuvee, this is a seriously, complex rose Champagne, possessing delicious fruit, but real focus and finesse, with a lingering, fine finish.

This magnificent ‘Rose de Saignee’ is born from 60 % Pinot Noir and 40% Chardonnay from 60 year old vines from Rilly La Montagne. Aged 10 months in oak barrels before bottling and 60 months sur latte, prior to degorgement.

Très jolie couleur– orange/pink with delicate, fine mousse. A similar red fruit profile to the Cuvee Rubis on the nose, but more intense and floral. A super balance between intensity and restraint on the palate, with the ripe, red berry fruits, combining with notes of almond and cinnamon.

Glorious purity on the palate, creamy in texture, elegant but with real complexity, making it not only the perfect partner to fresh salmon, langoustines or sushi, but also great with more powerful dishes – even lamb!


Vilmart Grand Cellier Produced from a blend of 70% Chardonnay and 30% Pinot Noir from Premier Cur vineyards in Rilly La Montagne, Vilmart’s Grand Cellier has to be one of the most refined and stylish NV wines of Champagne. With wonderfully expressive and pure aromas of white flowers, honeysuckle and citrus notes which continue and develop on the palate to combine with delicate hints of hazelnut. Without doubt one of the finest NV Champagnes, with incredible focus and finesse. This is akin to a great Puligny.

A wonderful Champagne to enjoy on it own as an aperitif, but as with most Vilmart Champagne, possesses the intensity and vinous character to serve at the table. The Grand Cellier makes an ideal partner to fresh sole or turbot with a mild sauce or with a variety of shellfish, such as prawns and oysters.

2012 Coeur de Cuvee The 2012 is an exceptional example of the Coeur de Cuvee. Produced from the oldest vines grown on Vilmart’s prime vineyard and aged in oak casks, this has the structure and complexity of a great white Burgundy!

Wonderfully decadent aromas of hazelnut and brioche, followed by vanilla and dried apricot fruit with a fresh citrus note behind. Amazing depth and concentration on the palate, with’ In Laurent’s own words.,’

‘ aromas of butter, "crème brûlée" and spices (white pepper) blossom awaken taste buds. It is a gourmand and generous wine with an exceptional freshness. After several minutes of tasting, the complexity and the scarcity of this wine give us an explosion of flavours in the mouth, a real aromatic symphony. Such an incredible personality for this Champagne! This vivacious wine lets your mind wander from bubbles to aromas, that may open our heart.

This is another Champagne with a fabulous complexity, which will partner a wide variety of dishes. Laurent suggests -

Crayfish and porcini mushrooms, scallop tartare or a "foie gras" pan-fried will bring depth and a beautiful aromatic evolution.

2011 Les Blanches Voies, Blanc de Blancs This is the second vintage produced of this truly exceptional Champagne. Originating from the sixty year old Chardonnay on Vilmart’s best vineyard, the ‘Les Blanches Voies’ it is aged for 10 months in barrel before bottling and a further 84 months sur latte, prior to degorgement. This wine possesses a strikingly different profile than the other Vilmart Cuvees, with a truly breathtaking focus and precision. Possessing wonderfully clean, vibrant aromas of citrus styled fruit combined with subtle nuances of vanilla and hazelnut, which carry through on to the palate, where the fruit profile gains more layers, with apricot and orchard styled fruits joining the party. Despite the tantalizing complexity of flavours however, this incredibly intense Champagne retains perfect precision and unwavering focus, with a super fine, persistent minerality from the chalky terroir, present until the last drop and beyond, as the wine continues to impress with a sensationally long, lingering finish.
