Il Borghetto
Il Borghetto was founded by the Cavallini family and is located near the small village of Montefiridolfi, in San Casciano. Tim Manning, a maverick winemaker from the UK, who learnt his craft whilst working in New Zealand, is in charge of the winemaking. Tim has a real determination to show the potential of the region, and tends to approach things in a way that is unusual in this incredibly well established region of Italy. As a result, he is at odds with the Consorzio of Chianti Classico over his methods and approach. Wild yeast, whole clusters and hand plunging, (as opposed to pump-overs), are among his preferred techniques. The wines are aged in a combination of burgundy barrels from different coopers, intended to match the specific plots the grapes are sourced from. There are about twenty or so small blocks of vineyard at Il Borghetto, each differing slightly from the other, be it in grape variety or clone, or a difference in soil type and slope aspect. Vineyard and winery have been certified organic from 2018, although the winery has been run organically since 2008. Biodynamic practices, but without certification, as yet. These are rich and deep wines, however Tim has managed to coax more attractive floral notes from this noble grape variety.
